Yield: 1 12-inch pizza (6 slices)

This California-inspired three-cheese pizza features a golden, lightly charred crust, creamy cheese, sautéed seasonal greens, fresh garlic, and thin shavings of aged cheese. Each bite brings together rich, savory flavors and a fresh, peppery finish.

This recipe is inspired by California’s farm-to-table food culture. It highlights quality ingredients, creative combinations, and the unique flavor of real wood-fired cooking. Wood-fired ovens add something special to this style of pizza. The high heat crisps the base, tenderizes the inside, blisters the edges, and melts the cheese perfectly. With good fire control, you get a tasty crust that goes well with fresh toppings.

There’s no set list of toppings or one crust style for California-style pizza. This three-cheese version is our ilFornino-inspired take on its fresh, creative spirit.

Ingredients:

For the Pizza Dough

  • 1 ball of pizza dough, approximately 9 ounces (255 g), ready to stretch
  • A little flour for dusting your work surface and pizza peel

For the Three-Cheese Topping

  • 2 ounces (55 g) sharp white cheddar cheese, freshly shredded
  • 2 ounces (55 g) creamy triple-cream cheese, such as Camembert or Mt. Tam-style cheese
  • 1 ounce (28 g) aged Italian-style cheese, such as Parmesan or Pecorino Romano, reserved for shaving over the finished pizza

For the Fresh Greens and Seasoning

  • 2 ounces (55 g) fresh dandelion greens, arugula, or baby kale
  • 21–2 teaspoons extra-virgin olive oil, plus a little extra for finishing
  • 1/2 teaspoon minced fresh garlic
  • Fine sea salt, to taste
  • Red pepper flakes, to taste
  • Freshly cracked black pepper, optional

Tip: California-style pizza focuses on freshness and flexibility. Choose local greens and good cheeses. If dandelion greens taste too bitter, try baby kale or arugula instead.

How to Make California-Style Three Cheese Pizza

Step 1: Prepare Your ilFornino® Wood-Fired Oven

Light your ilFornino® wood-fired pizza oven and let the cooking surface heat up evenly. For this recipe, aim for a cooking-floor temperature between 650 and 750°F. Adjust the flame and baking position to match your oven and dough thickness.

A well-heated stone gives the pizza a crisp bottom. The live flame creates a golden crust and the classic wood-fired flavor.

Pro Tip: Always check your cooking surface temperature instead of just watching the flame. Keeping both the stone and flame balanced helps the crust bake evenly and prevents burning before the cheese melts.

Step 2: Prepare the Greens

Wash the greens thoroughly and pat them dry. Remove any tough stems, then cut the leaves into manageable pieces.

Heat the olive oil in a skillet over medium heat. Add the greens with a small pinch of sea salt and sauté for approximately 1–2 minutes, until just wilted. Transfer to a plate and let the excess moisture drain.

Lightly cook the greens to keep their flavor and prevent the pizza from getting soggy.

Step 3: Stretch the Pizza Dough

Bring your prepared pizza dough to room temperature until it feels relaxed and easy to stretch.

Dust your work surface with flour and gently stretch the dough into a 12-inch round, leaving a slightly raised edge for the crust. Avoid pressing all the air out of the outer rim.

Transfer the dough to a lightly floured pizza peel. Gently shake the peel to ensure the dough slides freely before adding the toppings.

Step 4: Add the Three Cheeses

Spread the shredded sharp white cheddar evenly across the dough, leaving approximately 3/4 inch around the edge.

Add small pieces of creamy triple-cream cheese across the pizza. The cheddar gives a savory, tangy base, and the creamy cheese adds a rich texture that melts well in the heat.

Save the aged Parmesan or Pecorino for after baking. Its strong flavor and thin shavings add the final touch.

Step 5: Bake in the Wood-Fired Oven

Slide the pizza onto the hot cooking surface of your ilFornino® oven.

Bake for approximately 2–5 minutes, rotating the pizza as needed for even browning. Cooking time will vary with oven temperature, flame intensity, dough hydration, and crust thickness.

Watch for these signs that your pizza is ready:

  • The crust has puffed up and developed golden-brown spots.
  • The cheese is melted and beginning to bubble
  • The bottom is crisp with a rich golden color.
  • The rim has a few attractive charred spots without becoming burnt.

Use your pizza peel to turn and move the pizza as needed. Wood-fired cooking is fast, so stay near the oven.

Step 6: Add the Garlic and Fresh Greens

Remove the pizza from the oven and immediately sprinkle the minced garlic over the hot cheese. Add the sautéed greens evenly across the surface.

The leftover heat softens the garlic’s flavor and keeps the greens fresh.

Step 7: Finish, Slice, and Serve

Shave the aged Parmesan or Pecorino over the pizza with a vegetable peeler. Add a little extra-virgin olive oil, some red pepper flakes, and black pepper if you like. Transfer to a cutting board, slice into six wedges, and serve immediately.

Enjoy the mix of crisp, smoky crust, creamy melted cheese, sharp flavors, and fresh greens. It’s a gourmet pizza that’s perfect for sharing by the backyard oven.
