Italian Pizza Preparation by ilFornino Part II
Part II- Proper preparation and assembly of the pizza pie is one of the keys to a great pizza. Once your dough is mastered, watch Alfonso Saviello shape, stretch and dress a pizza for the oven. Pushing the dough flat from the center outward being careful not to deflate the edges is key to a true Neapolitan Pizza.
Note that the pizza is not over-sauced as to create a soggy pie. And just the right amount of toppings will insure a balance of flavor and complete cooking.
