How to get Started & Fire Up Wood Fired Oven

Posted by ilFornino New York on 24th Oct 2017

Welcome back to ilFornino Wood Fired Pizza Oven Company. Today we take you through the process of starting your the fire and getting your oven ready to cook mouth watering wood fired pizza pies.

Here is a quick overview of how to start your oven. Start with 4-5 pieces of dried wood (hard wood) make sure the wood is air dry or kiln dry wood. Oak is a good source of high BTU. Stack the wood as seen in the video, use newspapers or fire starters. Fire starters are a great fast way to get the fire going. Make sure the damper is open and let the fire start. After about 8-10 minutes put the door on and keep a little draft so as to feed the fire.

Have some patience while manning the fire. Add more pieces of wood as needed to increase the temperature. The oven should be ready in about 30-45 minutes. At that stage open the door and brush all the ashes to the back of the oven. Move the fire either to the back of the oven or to the side of the oven.

Now you are ready to cook. Make sure your floor is not very hot otherwise you will burn the bottom of your pizza. If this happens you can keep the door open and wait until the floor cools down or use a screen. You can find screens in our  accessory section of our website.
