Pre-requisites: Existing knowledge of heating and cooking in your wood fired oven.

Who should attend: New or future users of wood fired ovens. Anyone who wants to expand their knowledge about making different pizza dough, proofing and proper handing techniques of pizza stretching.

Topics Covered:

  • Making dough from scratch using different types of flour (Caputo 00, King Arthur etc.)
  • Proper techniques to proof the dough.
  • Stretching the dough. Learning how to stretch the dough.
  • Cooking the dough in the oven.
  • Enjoying your tasty creation at our pizza party.

Who should attend: Current wood fired oven users. Anyone who wants to expand their knowledge further and start cooking like a professional.

Topics Covered:

  • Learning how to use the dough mixer in making your pizza dough.
  • Learning about fermentation and maturation of the dough.
  • Advanced stretching techniques.
  • Introduction to Neapolitan Pizza.
  • Enjoying your tasty creation at our pizza party.

Facility and venue

Our facility is located in Valley Cottage New York 45 minutes north of Manhattan. Free Parking is available on site. Our brand new facility and showroom occupy 3000 square feet of commercial space. We have two indoor ovens and 6 outdoor ovens to practice with as well as a full range of dough mixers.
