Wood Fired New Zealand Lamb Chops with Fresh Mint Sauce Recipe

The Lamb Chops are an excellent choice for cooking in the wood oven. It cooks in a short amount of time and has a wonderful flavor. Chef Fatima from ilFornino demonstrates making mint sauce and cooking the meat to a perfect media rare. These perfect New Zealand Lamb Chops are a quick and easy dinner idea that the entire family will enjoy.

Ingredients For the Mint Sauce

  • 1 ½ Cups of fresh Mint leaves
  • 1 Garlic clove
  • 3 tablespoon of Olive oil
  • 1 tablespoon of cold water
  • Salt & Pepper to taste

Instructions

Add all your ingredients in a bowl and use your hand blender to process all the ingredients into a smooth sauce.

Ingredients For the Lamb Chops

  • Rack of Lamb
  • 1 full rack of lamb cut
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper

TIP 1: Cut your rack of lamb in half so as to fit in your cast iron skillet.

Tip 2: Pr-heat your skillet for 10 minutes in your ilFornino pizza oven.

Tip 3: Cast iron skillet will get hot to handle, use out kitchen mitts.

Tip 4: When taking the cast iron skillet out of the oven, have a trivet ready so as not to burn your countertop or your cooking surface.

Instructions

Apply the salt and pepper to both sides if he meat. Place fat side down on your cast iron skillet and place your skillet in your ilFornino Pizza Oven at 500F. Cook for 4 ½ minutes per side or until the internal temperature of the meat gets to 120F. Take the skillet out of oven and let the lamb rest for about 5 minutes covered. Slice the lamb and drizzle the fresh mint sauce. Enjoy!
