 Are you ready to make an authentic Tuscan Style Salad Pizza?

Start off by drenching your dough in flour. This will keep it from becoming sticky to the touch. You want to keep everything nice and dry. Once you start to spin the dough, most of the flour will fall off. Work with the dough crust by pinching and pressing down. Don’t press too hard or you will let all of the air out of the dough. To create a nice Neapolitan pizza, you want the dough to be thoroughly cooked and if you press too hard you will end up with a raw product.

We call it the New York slap or the Italian Grandma slap – spin the dough around and around on your fingertips until you see that the dough is nearly paper thin. This is ideal! It is the canvas of your artwork.

For the Tuscan Style Salad Pizza, you’ll need mozzarella cheese, parmesan cheese, figs, arugula, and balsamic dressing. No tomato sauce. You can substitute mozzarella with goat cheese. Spread the mozzarella or goat cheese across the crust.

Remove the  Wood Fired Oven door and place the pizza in the oven. Watch how quickly the cheese melts. The dough will start to blister, so give it a little lift – you don’t want it to be scorched by the fire. In 30 seconds, it’s nearly ready. Raise the pizza to the top to melt some of the cheese and help part some of the smoke from the fire. Then pull the pizza out! What you’ll have is a beautiful crust. Top the hot crust with some figs, a little olive oil, some fresh arugula leaves, and some shredded parmesan. Drizzle with the balsamic dressing and you’ll have the perfect Tuscan Style Salad Fig Pizza – old world meets new world meets your mouth!
